The goal of this study was to find a diet at the lowest cost which could provide the best results in terms of mortality, final weight, fertility and protein, lipid, ash and carbohydrate contents. On the other hand, insect tasting sessions were organised both in Vietnam and in Belgium in order to study and to compare consumer acceptance and to determine the development potential of this practice in each country. The results of the breeding show that no experimental diet differentiate clearly from others when all factors were taken into account and extra feed did not bring nutritional advantage. Concerning consumption aspect, Vietnamese and Belgian respondents seemed to be ready to consume insects in the future. Surrounding insects with a fritter dough allowed to improve a series of parameters as taste, texture, smell and aspect of the preparation. The benefit of tasting sessions was also highlighted because they allow participants to make their own opinion which was generally positive in this study. ; L’humanité doit faire face à des problèmes majeurs tels que la croissance démographique qui l’oblige à trouver des alternatives pour se nourrir.
